This parfait will make a perfect meal or snack packed with great added benefits. Strawberries and bananas can offer good Vitamins and Minerals: Both fruits are good sources of vitamins C and B6. Strawberries are also rich in vitamin K, while bananas provide potassium.
Ingredients
- 3 cups Greek yogurt plain
- 1 cup dry old-fashioned oats
- ¾ cup diced strawberries
- ¾ cup diced banana
- ½ cup chopped walnuts
- 2 tbs coconut oil
- 3 tbs honey
- 1 tsp cinnamon
- 1 tsp nutmeg
Cooking Instructions
- Add honey and coconut oil to a microwave safe dish a lightly heat until both have melted.
- Pour honey and coconut oil over oats, walnuts, and spices. Mix contents thoroughly they lay on parchment paper in air fryer pan and spread evenly.
- Heat for 12 minutes at 330°F. Check after 5 minutes to make sure it is not burning. Let it sit after heating, then break up into a bowl.
- Dice up banana and strawberry and mix.
- With a 16 oz mason jar (or other pint glass) Layer in this order: ¼ cup yogurt (bottom) ¼ cup granola, ¼ cup yogurt, ¼ cup fruit, ¼ cup yogurt, ¼ cup granola, ¼ cup yogurt, ¼ cup Fruit (top)
