Loaded with flavor, from earthy cumin and paprika to diced tomatoes and peppers, Shakshuka is a great North African dish. This dish includes both eggs and tomatoes which are packed with protein, vitamins, and antioxidants, this delicious dish nourishes your body!
Ingredients
- 4 large eggs
- 2 cups canned diced tomatoes
- ½ cup diced sweet potato
- ½ cup diced onions
- ½ cup diced bell pepper
- 2 tbs butter
- 1 tsp cumin
- 2 tsp paprika
- 1 tsp garlic powder
Cooking Instructions
- Chop up all vegetables to desired size. Add butter to a deep sauté pan, add chopped vegetables, and sauté until all vegetables have become tender.
- Add your seasoning mix to sauté pan, stir, and let toast for about 1 minute.
- Add the canned tomatoes and let come to a low simmer (will need to reduce heat)
- Crack each egg on to stew and let pouch until desired temperature.
- Add a pinch of salt and black pepper to each egg, serve, and enjoy!
