Shakshuka

Loaded with flavor, from earthy cumin and paprika to diced tomatoes and peppers, Shakshuka is a great North African dish. This dish includes both eggs and tomatoes which are packed with protein, vitamins, and antioxidants, this delicious dish nourishes your body!

Ingredients

  • 4 large eggs
  • 2 cups canned diced tomatoes
  • ½ cup diced sweet potato
  • ½ cup diced onions
  • ½ cup diced bell pepper
  • 2 tbs butter
  • 1 tsp cumin
  • 2 tsp paprika
  • 1 tsp garlic powder

Cooking Instructions

  • Chop up all vegetables to desired size. Add butter to a deep sauté pan, add chopped vegetables, and sauté until all vegetables have become tender.
  • Add your seasoning mix to sauté pan, stir, and let toast for about 1 minute.
  • Add the canned tomatoes and let come to a low simmer (will need to reduce heat)
  • Crack each egg on to stew and let pouch until desired temperature.
  • Add a pinch of salt and black pepper to each egg, serve, and enjoy!
