Cabbage is highly nutritious and is commonly grown in Florida in the fall but can be found at most grocery stores year-round. Cabbage is high in vitamin c and fiber and can make a great addition to any meal! Try it in this delicious, shredded cabbage salad!
Ingredients
- 4 Cups of Cabbage, Shredded
- 1 Cup of Bell Pepper, Sliced into Thin Strips
- 1 Cup of Tomato, Diced
- 1/4 Cup of Sunflower Seeds
- 1/4 Cup of Olive Oil
- 1 oz of Lime Juice
- 1/4 Cup of Malt Vinegar
- 1 TSP of Garlic Powder
- 1/2 TSP Onion Powder
- 1 TSP Thyme
- 1 TSP Coriander
- Salt to Taste
Cooking Instructions
- In a large mixing bowl, build your salad with cabbage as the base, then add the bell pepper, diced tomatoes, and sunflower seeds.
- In a measuring cup, add all of the spices, lime juice, and malt vinegar to create the dressing. Mix together. Optional: zest the lime with a grater over the salad.
- Add the dressing and mix. Salt to taste and serve!
